I believe I have my 2 wall mount batteries connected to the 6000XP correctly, but….how do I know, where can I see on the panel, APP or web monitor that the inverter is seeing 2 batteries ?

If you are using closed loop communications between the Batteries and the inverter you should be able to see the Bat count on the right side of the web monitor:
