I recently got a solar system with an EG4 18KPV inverter. It's generating less power than expected and I want to make sure all my panels are properly connected.
Is there a way to see how many solar panels are connected in the monitoring center?

There is not. Do you know how many you installed and VOC of the panels?
How many volts are you getting as of now per string?
I have 14 400W panels with a VOC of 37.07. It should be one string of 9 and one string of 5, per the plans.
VpV on string 1 is peaking at around 260V. String 2 is, on further inspection, around 16 at peak, which doesn't seem good at all.

Is that 16 or 160?
Are you panels stationary mounted (like on a roof) or are they on an adjustable mount?
rough math 9X37.07 = 333.63
you are getting 260 about 78% - depending on angle of panels to sun this may be realistic.
5X37.07 = 185.35
at 160V that would be about 86% - again depending on angle it may be realistic.
if it on 16 then there is something wrong and need to do some investigation - it would look like a fault someplace along the line.
Sometimes the easiest solution is the best solution.
Sometimes not.
I recommend inspecting the PV cables to ensure they are properly connected and that none are damaged.
